1 center cut pork loin roast (3-4 pounds) 1/2 tablespoon ground sage 1/2 tablespoon ground thyme 1/2 tablespoon ground rosemary 1/2 tablespoon ground oregano 1/2 tablespoon smoked paprika 1 tablespoon kosher salt 1 tablespoon freshly ground black pepper 1/2 cup mayonnaise Instructions: Heat smoker to 300 degrees using wood of choice (apple, oak and hickory are good options). Remove pork loin roast from packaging and dry with a paper towel.
