Even if you haven't eaten straight up nixtamal (known in the Southern US as “hominy”), you have most likely consumed nixtamalized corn in one form or another. Tortillas, masa dough, proper grits, and even Fritos are all made with corn that has undergone nixtamalization, a process wherein corn is soaked in an alkaline solution to make it more digestible, more nutritious, and—in my opinion—more delicious.
