This rhubarb, harissa and potato galette is, perhaps, one of my favourite recipes using rhubarb. The tangy rhubarb compliments the starchy potatoes and cuts through the heat of the harissa. Topped with a few spoonfuls of mascarpone and eaten whilst still warm, this makes the perfect spring lunch.
